Whole 30 – day 15

We rushed out the door in the morning. Jesse was teaching and I decided to tag along to go grocery shopping while he taught. I enjoy those cars rides – just talking and catching up, setting ourselves up for the rest of the week.

Breakfast: Neither of us were hungry when we woke up, so we skipped breakfast.

Lunch: Meatballs [beef, shredded carrots, shredded zucchini, shredded onion, salt, pepper, and chipotle pepper] with roasted veggies [cauliflower, brussels sprouts, potatoes, coconut oil].

Snacks: A few nuts and dates. Jesse had a hardboiled egg, banana, and baby carrots.

Dinner: Another recipe I’m not sure what to call… cashew chicken [chicken, coconut oil, onions, garlic, ginger, celery, baby bell peppers, salt, cayenne pepper, toasted sesame seeds and cashews, and chopped fresh basil]. I was planning on making this into two meals, but Jesse has had a voracious appetite on whole 30, so he ate the entire pan of it when he got home from work (after I’d left for work). We’ll see if he gains some weight back this week. 🙂

How we felt: Pretty good! My descriptions are getting shorter and shorter. 🙂
